They don't have human level intelligence, but they, like pretty much all animals that are eaten in abundance, feel pain, feel fear, don't want to die, don't like getting cramped into the horrific places we put them in and ground to beef.
Also, Pokemon aren't really treated as "human level intelligence" outside of a few very specific and relatively obscure examples and are publicly regarded IRL as largely just a replacement for animals. When a kid sees a Tauros in universe, they're not thinking about that talking Zoroark from BW2 or Calyrex or Alakazam's dex entry and reverse engineering that to say Tauros can solve their algebra homework, they're thinking of a fucking bull.
The endpoint of this all being that if you're horrified with the prospect of kids thinking about Pokemon getting eaten, you should be equally rallying and crying against real life animals, who are treated far worse than Pokemon, getting mass slaughtered and consumed.
