If I were to play each version and release of all the Pokemon games, and only used unique Pokemon on my team for every playthrough, would I have any Pokemon left to use by the time I hit the Let's Go games?

It would be, but you would have to deprive yourself in games that depend on Kantomon to pad the dex, and you would run out of starters before even leaving gen 1, so I'm wondering how bland or interesting the teams would be.
You'd definitely eventually run out of Fly users, so they'd be best spent in the slowest games. Unless you purposefully used unevolved Pokemon, but that seems like a lame copout.
