They're disciplines they discovered on their journeys that bring them even more fulfillment and greatly benefit those around them. They're not settling, they simply aren't the same people they were when they began their journeys.
Misty's is a little less ideal since she was pressed by an outside force and doesn't seem to enjoy being a Gym Leader, but she learns to work with it to pursue her goal anyways.
