Let's Go Pikach/Eevee are good, but they're a bit more casual and dumbed down since it was clearly designed to make Pokemon GO players interested in buying a Switch and ease them back into Pokemon games.
Brilliant Diamond/Shining Pearl are remakes in graphical quality only, there's very little in terms of new content compared to what was added in the other remakes. You're better off playing Platinum.
Legend's Arceus is its own thing, its approach to the gameplay is different to the other ones, but it's very acclaimed.
