Honestly, why haven't they made a Pokemon Trading Card amiibo game?
Just don't make buying cards required like how Animal Crossing amiibo Festival worked and I think we could have a legitimately good game out of this.

In BotW you get items, like weapons and food, from opening chests you do with your amiibo and small chance of getting the amiibo's matching clothes.

Now imagine in Pokemon games, like BDSP, if you want to get berries, luxwry balls or perhaps small chance of getting the pokemon from deliveryman NPCs in pokemart. Pokemon or EV vitamins.

Another way of getting berries or early EV training.

tbf Sakurai recently mentioned that when a character gets in to Smash, they get special licensing rights to make amiibo of all of the playable characters (Except Sora because Disney), that's how we got amiibo for characters from notoriously stingy third-parties like Square-Enix.

GameFreak can atleast get someone to make clever use of Nintendo Switch amiibos with switch games but I guess gen 8 and gen 9 (likely gen 10 in the future) is okay.
