Certain recurring NPCs only show up if the opposite sex is chosen in the sequel game, implying you should pick that instead of sticking to the same one for both games. Unova's lore on two kings ties into Hilbert better than Hilda since him and N are both men, so I lean on Hilbert->Rosa being the more intended choice. Adding to this, Rosa's the one who gets all the focus as a protagonist, while Nate is all but forgotten. Hilbert and Hilda get equal focus, however.
For Scarlet and Violet, it all depends on which version you roll with. Scarlet heavily favors Juliana as the protagonist, as much of her art is shown in the Naranja Academy uniform and with Koraidon, while Florian is the Violet protagonist, in the Uva Academy uniform and with Miraidon. They both get equal focus, but it all depends on what version is being shown off.
