The writing is one aspect, they had a lot more character and were less restrained.
But I also think the colors play into it, starting with Sinnoh or Unova the anime became an oversaturated eyesore.
Indigo League and maybe the Orange Islands hold up but past that nothing is really that enjoyable anymore.

The writing was better, each episode was unique/memorable, and 90's hand drawn animation is still king. I watched the new series on Netflix and it was ok I guess but I can't really remember a episode outside of the suicune one
