Elite four don't really count since they all blend together because you fight them in a row.
Most people would remember someone like Wally who attacks you when you least expect it at the end of a dungeon where your pokemon might not be at full strength

Not the entire team naturally, but Garchomp, Lucario, Spiritomb guaranteed.
Gastrodon less so, but its also associated with Cynthia.
