He doesn't needle Ash anymore beyond as a joke because he thinks he's great, so now he's just needling the people AROUND Ash. "Oh, you think you're cool enough to roll with this guy huh? I'll be the judge of that."
He's generally more pleasant and humble as a result of growing older, but it's also just a genuinely funny twist that his interactions with Ash's group remain very similar to the old days, just inverted.
