You need to complete all the school exams. Then Giacomo and Eri will appear in the left side of the entrance hall, go talk to them to start their mini-sidequest. After completing it Atticus will appear at Porto Marinado to auction replica gear of famous past trainers. Hope you have money, shit's expensive. I've also heard that completing the tutoring is required to start Pecharunt's event quest, in addition to Gamefreak actually activating the event quest itself.

There are still 30 trainers you can rematch at BB:
All paldea gym leaders, all paldea e4, all BB E4, all teachers, geeta, clavel, cyrano, carmine, kieran, and nemona, arven, penny (those last three are locked until dokutaro events though)
Still a shame that they did nothing to buff team star despite making new little story content for them
