What's the point of evolutions anymore?

Ever since gen 8 came out, and ESPECIALLY with gen 9, fully evolved pokemon being catchable in the wild has become the standard. Some have defended it, but I think it's legitimately the worst trend in all of pokemon and fundamentally RUINS the entire game.
Here's why. Think of Magikarp. It's the worst pokemon of all time, but it evolves into Gyarados which is much more powerful. If you wanted Gyarados, you NEEDED to use a magikarp. But NOWADAYS, you can just immediately catch a Gyarados, so there's no reason to EVER catch a Magikarp. This can apply to any other line. Why use Exeggcute? Why use Dratini? Why use Evee? THERE IS NONE, because you can just catch all their final evolutions in the wild with zero effort.
THE ENTIRE POINT OF THE GAME IS TO RAISE YOUR POKEMON AND WATCH THEM GROW BUT NOW ITS ALL GONE
THIS BULLSHIT AND RUINS THE WHOLE GAME
