The term you're looking for is "one per universe" in some cases.
Pokemon is a multiverse franchise where alternate universes and timelines are constantly crossing and exchanging their contents, so there's not actually such a thing as "one of a kind" in the grand scheme of things.

There's only a handful of legendaries that are canonically not unique (mostly ones with a gender ratio) and the only boxart legends that have multiple confirmed members of their species are Solgaleo and Lunala.
You have to do significantly more headcanoning to come to the conclusion that world shattering deities aren't unique specimens.

Most legendaries aren't deities. Gen 4 really did a number on people's brains with Arceus and his little babies. It's basically just the Creation Trio, Emotion Trio, Arceus, and arguably the Weather Trio who are functionally gods. Just about every other legendary is either 'member of an incredibly rare/extinct species' or 'product of a science experiment or a unique event', not some kind of god, no matter how strong they are.

Because mechanically speaking, the gender of genderless pokemon is set as 'genderless' while mechanically the gender of most legendaries is set as 'unknown' in the code. They're two different things that get displayed the same.

Hell even the weather trio are this. Kyogre/Groudon are called an extinct species in RSE, we see a Groudon fossil and Lucius owned a Rayquaza in the anime, and Masuda even outright confirmed that the legends about them are exaggerated.

Creation trio aren’t safe either. The protag makes another creation dragon from the mystri stage in HGSS
