It's not because they don't want to be sued, it's because they don't want to spread potential misinformation by relying on "presumptuous information", I.E. context gleamed but hasn't been openly confirmed from Nintendo, TPC, GameFreak, Creatures or any other official Pokemon source.
Even the most innocuous of things that SHOULDN'T be an issue follow this process of "don't present presumptuous information as hard fact."

Because they use phrasing that avoids presenting something as hard-fact such as "it MAY be based on," "it is POSSIBLE it is based on", "it RESEMBLES", "it APPEARS to be based on", and so forth.
The whole origin field is their excuse to spout headcanons shamelessly, but they very carefully select words and terms to excuse themselves in the event that their headcanons are proven incorrect.
