I played through Moon and Ultra Moon back to back to get the version exclusives and all starters for my gf who recently picked up Ultra Sun.
Rainbow Rocket is new and introduced pretty much right away. The ultra versions flesh out the plot more and have a surprise casual-filter story boss if you don't grind or manage a decent team. I will say the overall plot is similar but does have some major differences as it progresses. Ultra has a superior post-game to the base versions as well with more things to do and pokemon to catch.

the rotomdex is eventually going to render this game unplayable btw, once you've been playing for long enough he'll constantly spam the same 5 tutorials on the bottom screen 24/7 and they will never end even once you've beaten the game
