I think that's just because hands are harder to hide.
The truth is that there's no singular perfect giveaway. Hands, feet, shoulders, jawline, torso, hips, skull, skin texture, muscle distribution, fat distribution, voice, movement, behavior.
Every single one of these is possible to perfectly mimic, but actually succeeding at mimicking them all at once is nigh impossible.
