It's not the gameplay as such they're interested in. What they actually like, I suspect, is the verisimilitude the inconvenience adds to the games -- it makes the world feel more authentic and full.
It feels a bit odd, as in gen 7, when you just call some random Pokemon over to you whenever you need to fly somewhere or break a rock. It looks and feels ridiculous, and it takes you out of the world. Pulling out your own Pokemon that you specifically trained to take care of these obstacles just feels better and more seamless.
Or likewise, breeding a shitty Pokemon and then dropping bottlecaps and mints into it to make it instantly perfect feels super video game-y. On the other hand, breeding dozens of specimens until you finally get a rare Pokemon with exceptional innate qualities -- this just feels more lifelike.
That's what people actually miss. They like these inconveniences because they flesh out the world and make it more believable. They don't really like the moment-to-moment gameplay (unless they're turbo autists), but they're too retarded to disentangle the feeling of the game world from the gameplay itself.
