Hitmonlee has weird, in parts simple morphology, for instance, but you still get a good sense of its form. It's not just soft and blobby like a lot of numons (throh for instance). You can see the bone structure in the arms, shoulders, and hands. Even in the groin and feet to lesser extent.
But this kind of visible structure isn't present in all OldMons, and it's not lacking in all NuMons, and that's mostly where the cope comes in. I do think newer mons tend toward the blobby, abstracted forms more than older mons, however. It'd be interesting to actually try and tally this up.
