I agree with you to a certain point, yes, normie NPCs hype themselves up and I sure wouldn't pay $700 for a moonbreon. But I do like the card, and I liked it from the second it got revealed because its fuckin cool.
it "shouldnt" be so expensive, and yet it is. Price is price. Enough people are willing to pay that much. A speculative bubble can only explain so much of price action. The economic laws of supply and demand are still in effect.

I mean, there is 100% correlation between desire and price. desire=popularityXartXrarity or some such logical mathematical equation. Its difficult to prove conclusively but its observable with experiment volunteers
I show my non-collector friends cards from time to time. They lose their minds over Umbreon stuff. He is really an incredible monster design. They also tend to pick card art they really like and, surprise surprise, their favorite of my Paldean Fates cards was the blue mew in the bubble. They know nothing of its monetary value but they all wanted it. Are they having taylorswift mindbeams blasted into their heads? Do normies need tinfoil hats for protection from the price hype hivemind?
I show my gf cardart as it gets leaked on pokebeach (just art no price) and she pointed out moonbreon and Lugia's ST alt SPECIFICALLY as cards she wanted for her small collection. Release hits and BOOM they blow up in price. Either she is a psychic type or shes got an eye for aesthetics
