It says way more numerous times that they are time traveling from the past and future coming from the professor who was successful, and only one mention of alternate timelines from the younger professor who didn't even succeed in bringing them yet. Any sane individual would choose to follow the one who actually knows the paradoxes' origins down the line.

1) Gameplay =/= lore, so they wanted to equate Scarlet and Violet. Therefore, they made extremely distant points in time the references and didn't rule out there being more paradoxes in that time, just like Ultra Beasts aren't somehow the only Pokemon in other worlds. Poipole is even a fucking starter.
2)Sada has no reason to bring in mons that are already studied extensively by modern science due to fossils being found, and would rather bring in the ones she was personally interested in.
3) Even if the Machine was somehow randomly bringing in Mons from the exact time Tyrantrum existed, pure chance probably wouldn't bring it, as there are more than 90% of actual species that existed back then that did not fossilize.
