They both work in different contexts. Mega Blastoise is a form that's more practical for combat. Three cannons are better than two, and it's easier to aim with arm cannons.

Gigantamax Blastoise is so big and slow that trying to aim is futile, so instead it fires all of its cannons at once to ensure that it hits something

I'm surprised how many people don't get this. Gmax designs are inherently focused around being big to the point of mobility being difficult. That's why they work for Dynamax and shrinking them defeats the purpose of the designs. It's why Mega Blastoise has a gigantic shell proportionally, it's not meant for actually doing proper fighting like a Pokemon, they only use certain Dynamax moves for a reason.
