Masuda said when working on XY they wanted to make the 3D models look like the Sugimori artwork, hence pink electrode.
The games that saturate the mons to look more like the sprites are from the B team who probably ignore that mindset.

They look at way because the models were designed as they ought be to be a neutral starting coloration so they'd be more receptive to various forms of lightning and rendering effects, the issue is Gamefreak as continued to falter in regards to implementing these techniques which has left many pokemon's original coloration highly muted under normal light conditions.

In PLA they added filters to the game to make it look like a painting. Without the filters they look more alike.

I will never forget what they've done to bisharp, not only did they seemingly pour a metric ton of bleach over the 3d regions they made a lot of pokemon just stand there or fly in place, better yet just hover (for a feature that was exclusive to one generation KEKEKEKEK)
