One could argue that elemental types could be generated from normal mons adapting to different environments, but it could be that normal is incompatible with "magic" and elements, thus the lack of any mixture of normal + any other type (bar flying)
Fighting is the only type that could be also associated with normal and flying due to the purely physical nature of it, and to think of it they have almost a triangular matchup. However fighting types might've shedded their normal type because the two are not compatible with each other. Like a hardened normal type becomes fighting, while a winged normal type gains flying. It's like obtaining a new metallic object by melting vs welding.
