Knowing when to keep your opponent honest and attack into an obvious Protect so if they do try to get cheeky you punish them. There are a bunch of mind games between Protect and Fake Out in doubles and it's what makes the format so engaging. Once I started playing doubles I couldn't get back into singles; it just felt too simple. I wish there was an option in the settings in game to have all trainer battles be doubles like they were in the Indigo Disk. It's so boring having to slog through a slow singles only game just to get to end game and start playing online doubles.
That said, the beauty of the Pokemon games is that they support a wide range of gameplay options, so if people want to play singles, whether it's Battle Stadium 3v3 or Smogon 6v6 they're perfectly free to and shouldn't be faulted for liking something different than you.
