Jobmon means a Pokemon (usually a starter), who is really only just a Pokemon built directly and obviously to represent a specific job and nothing else, like Incineroar just being a straight-up heel wrestler, or Meowscarada just being a straight-up magician, or Primarina being a straight-up sexy singer lady wearing a metaphorical dress.
People tend to throw fits about jobmon because Pokemon used to be a lot more ambiguous more often, like Blaziken just being a generic kicking chicken thing based off cockfighting, or Venusaur just being some big toad thing with a huge flower on its back. What jobs could they do? What hobbies would they have? It's up to your imagination. Cinderace, I mean, that thing is literally just a soccer player. That water starter from last gen is just James Bond, gun and all. It makes it harder to imagine jobmons as anything but their "jobs".
That said, the "starter sticking to a deeply locked-in theme" thing is old enough that it's basically tradition at this point, so it's unlikely to change.
