I think either Gen 2 or Gen 3 is a good stopping point

Everything past that plays the exact same except for gimmicks like Megas and Dynamax.

gen 3 is a horrible stopping point, it has more in common than the games after it than the games before.
the only people who consider gen 3 the last classic gen are the people who grew up with it.

But if you want to include newer games, you could also make the argument for bw2 (last game before 3d and global releases)

You could also make the argument for oras (last game before removal of hms, last traditional remake)

You could also make the argument for usm (last game before dexit, and switch has no backwards compatibility)

Genuinely am glad people are finally coming back around to the 3DS games after people just completely turned on them after dexit.

Gen 5 was transitional. It had the beginnings of nu-Pokemon: breaking the formula of 2 base versions + 1 "enhanced" version, non Japan based region, linear path through the map, more tutorial and forced exposition to click through, "subway map" style map screen instead of squarified, some areas at least warping the tile grid to feel less square, changing how exp works.

I'd argue it was Diamond/Pearl, they were part of that early push on the DS where the novelty of expanded portability/touch controls/internet features was a big thing in the cultural zeitgeist.
starting with Platinum you could see gamefreak's pivot to iteration for a few years, then starting with XY you see the franchise start to buckle under its own weight.
