I guess the regional flavour of their cuisine is inspired by the Pokémon living around Pallet Town excluding the poisonous ones like Tentacool and the disgusting ones like Rattata.
This means they eat Pidgey, the vegans eat Tangela, their seafood is Poliwag, Goldeen and Staryu. Oh they also eat a lot of agricultural produce and whatever they import from other parts of Kanto.
