The game never spells it out, but the implication seems to be that the professor had already been dead for about two years by the time the game starts. That's a lot of time for him to cope. From what he knew, the only two things he could conclude were "my parent died" and "my parent abandoned me for good and entirely stopped trying to care about me". It seemed like he tried to convince himself of the second option, which is why his reaction towards any mention of his parent was consistently anger and resentment. He's not jealous of the MC when he hears his parent's voice on their phone, he gets mad because it makes him think "aha, so he/she didn't die, my piece of shit dad/mom really just chose to ignore me".
But despite hearing their voice, he still knew something isn't quite right about them when the group was in Area Zero. Actually, in the German localization, Arven shows his doubts way earlier, directly after the phonecall after defeating that final titan. After the MC walks away, he said "Was that really you?"
The English version doesn't do this, so I have no idea which translation is closer to the original. Point is, he subconsciously knew that his parent was dead and didn't really know how to deal with it, which is why he lashed out in anger instead because that's the "easiest way" to process negative emotions if you don't want to seem weak. He learns that it wasn't the right way to go about it, but he just learns this a little but too fast to be believable. There was almost no struggling involved.
