The world would need to be more dense with places for pokemon to hide, or interactive features to trigger certain encounters, so you don't just have a dozen pop up on screen. It comes closer to trivializing luck based factors like IVs, level, male/female, even shininess almost, makes gameplay more passive (standing in an area waiting to check if what you want showed up), and looks like shit all the while.
I just said until they're capable of that, as another anon said, and like with a lot of things in pokemon, abstraction works better.
