The definitive best way to experience Kanto is straight up just RB, to me, played on a GBC.

Abilities, improved learnsets, Dark/Steel type, held items have varying impact on the campaign from literally none to barely at all to situational.
The games are locked to prevent you from obtaining nat dex mons, even something like Crobat, to the absolute end of the postgame. The really may as well have not been included. There was not anything worth using them for by that point.
Speaking of the postgame, Sevii Islands, they're alright, but it does kinda feel like a way to cram all the Gen 2&3 features into the game in a disconnected way, and it's annoying thinking about them when I just want to get to Cerulean Cave or trade with Emerald. Feels like a chore because of that stupid decision.
Also, I know Yellow brought a lot of misc improvements, but I think getting handed all 3 starters, not being able to obtain Raichu just to try to force you to use Pika, anime references shoehorned in, is all cringe.
