>Leaf Stone Evolves Grass-types and makes them grow “wilder” and leafier. Vileplume uses this stone despite not having leaves because 1) it predates most other stones and 2) rafflesias don’t photosynthesise so it doesn’t fit the Sun Stone (which Gloom already uses)
>Fire Stone/Thunder Stone/Water Stone Makes a Pokémon more fiery/electric-y/watery. Thunder Stone has also come to be used for magnetism (Probopass) and Cloyster would absolutely be an Ice Stone evolution if it existed in Gen 1
>Ice Stone Same as above but with Ice, came way way later but evolves a lot of Pokémon
>Sun Stone Specifically the warmth and light of the sun - it evolves more bright, floral Grass types compared to the Leaf Stone as well as Heliolisk which is based off a sunbathing lizard.
>Moon Stone Probably the most esoteric besides the Dawn Stone, most Pokémon that evolve with it have cultural links with the Moon rather than the literal references with the Sun Stone
>Shiny Stone More “light as good” than literal light, since it makes Pokémon either more joyful or more elegant.

More stones even if they have slight overlap is a good thing, actually, because it gives the world more flavour and allows them to distribute the stone evos without creating too much competition.
