Like Fuecoco kinda fit as the snake, but I can't justify calling a crocodile a snake. It just doesn't work.
That said, there's a few things they could do for the remaining ones:

Minotaur has a lot of typing potential. Fighting, Fairy, Rock, Ground, Steel, or Dark all fit.
Really only part Steel works for the latter.

Part Fairy or Flying works well for Pegasus.
Centaur you could do Fairy, Fighting, Psychic, Ground, etc. Lots of possibilities.

Typing could really be anything. Part Ground, Rock, Dark, Psychic, etc.
