Never counted Lets Go as a remake as much as a slapped together little Pokemon Go ad that they just set in Kanto for the widest appeal. It plays completely different to any other Pokemon game.

At the very least Gen 5 had a lot of extra postgame content that made that lack of a Battle Frontier sting that much less. Gen 6 and onwards don't even have that going for them.

If we're talking post-game maps, it's on par with something like DP or Sevii Islands, even if it doesn't reach the heights of GS it's not the basically nothing of Gen 1, RS, or XY as examples (something like SM is just underwhelming but in fact exists). If we're talking optional or repeatable content it's also fairly good, again not quite up to Emerald or Platinum/HGSS, but it's definitely more than USUM's Battle Factory but slightly fucky, Mantine Surf, and the Sonic 2 special stage, and way more than XY's functional like 3 worthwhile battle formats and mostly shallow minigames. This isn't even getting into SS and SV being overcentrilized around raids to the exclusion of basically any other extra content.

Post-game maps aren’t relevant. Would you be happy with ORAS not having BF if the game ended at Lilycove and the rest of the maps were after the credits as “extra postgame”?

Honestly that would probably improve RS's already excellent campaign, given how poorly the water maps fit into the actual campaign, with the only downside being the excellent Regi sidequest being locked to post-game only which isn't even that bad as it's still just as fun (compared to something like XY's Zygarde which would be more fun during the campaign or the legendary birds in the same title which would not be fun no matter when you do it but at least letting you trigger it early builds expectation). It would also give them the excuse to make every area on the sea completable in any order, allow them to put things there they otherwise would not, and generally make the open-ended exploration of the water routes matter even if they didn't touch the encounter tables at all (in fact the lack of new encounters would probably sting less when you have a reliable team that you absolutely wouldn't want to replace any Pokemon on). Furthermore, when people complained about RS's lack of post-game, the only Pokemon title with any post-game was GS, which was largely just post-game maps. Nobody expected the Battle Frontier, which is why FRLG instead expanded on new maps with Sevii Islands, and Masuda's following two titles DP and BW explicitly went out of their way to include most one and done post-game areas. Similarly, SM didn't receive the same "lack of post-game" criticisms as XY by including a handful of maps on the final island that were post-game only, so clearly the majority of people do consider them to be relevant. Being able to visit new areas in a video game is pretty important. Over-reliance on certain assets can be detrimental to the game, look at how bland DP is or how disappointing the Lumiose revisit is in XY despite there being a lot more to do there.

Same to you, the game you design would be a boring slog like XY or you'd make a game that would be only fun with mods (since I doubt you'd design a game like SM with the option to play it the fun way instead of whatever way you think is best). On the other hand, my game would instead have a design theme that is consistently applied in every aspect of the game, from the mechanics to how the game flows. Most good video games attempt this, although few really go all the way, and some just completely fuck up. Pokemon consistently fucks up in little ways, GS is a solid living world but the levels are a bit samey for a while, RS is excellent at providing a sense of adventure but the map design at the end falls apart a bit, XY is about beauty but despite having some of the aesthetically best map designs in the series the overworld style is probably the second worst meaning it looks kinda shitty, I could go on.
