Because it is. Faux realism doesn't work unless you redo the Pokemon artstyle from the ground up including the creatures themselves.
Realistic humans and realistic environments with anime creatures populating it will always clash visually.
It's why Let's Go, in terms of art style, is the best game on the Switch and that's not saying much. XY are still the best looking 3D games.
