I recommend the original games or subsequent remakes. If you don't mind the catching mechanics being the watered-down mobile game stuff, Let's Go Eevee/Pikachu is on the switch and a good remake of the original Yellow version. Otherwise, FireRed/LeafGreen for the GBA is probably the best, and you can find and emulate those easily enough. Same for the original Red and Blue, which I recommend if you don't mind the oldschool graphics and minor jank.
From there, I would say progress through the series in some kind of release order. Meaning:
GS / HGSS
RSE / ORAS
DP / Platinum / BDSP

B2W2
XY
SM
USUM (you could skip SM and just play USUM)
SwSh
There are some good spinoffs too. If you like double battles and gen 3 mechanics, the Colosseum games are worth trying.
