They do, but they also have regional dialects with their own words and meanings. If you see a Japanese character written with a heavy southern US accent, that's usually representing the Osakan dialect (accent).

Or the translators just ignore the dialect entirely, leading to retarded scenes like the one in Pokemon Masters where Ethan notices Valerie "sounds like she's from Johto" even though she doesn't talk in any kind of dialect in the translation.
