We get introduced to new golems little by little, as, in the past, Gigas was trying to rebuild his brethren for Round 2 against Arceus.
Maybe give the Regi's Primal Reversion forms ala Groudon and Kyogre but only when they hold their corresponding Type Plate.
But how would humans get involved?
Maybe get an archeologist who discovered the truth about Creation and is trying to gather the Regi's to wage war against Arceus and destroy creation to rebuild it in his own image ala every other pokemon villain.
Maybe he was brainwashed by one of the new Golems and Gigas doesn't want to fight Arceus anymore as he mellowed out over time.
Maybe get a region where Gigas taught Golem Creation to Humans and have new artificial pokemon that can only be obtained via a crafting mechanic? Could probably create Baltoy and Golett using this mechanic alongside other, newer, golem pokemon.
The theme would probably looking to the past and learning how our ancestors used technology to live in harmony with nature, as well as to not repeat their mistakes.
