As for Elesa's height being 6'3", it kinda tracks. She's extremely lanky and models in the real worlds tend to be tall, so it makes sense for a pokemon character to exaggerate that.
Even Nessa, a fellow model, but who has far less extreme proportions is on the taller side for pokemon women. I believe at 175(5'9") cm she used to have the highest confirmed height of all the girls- Eri was obviously taller, but her estimated height of 6'5" is based purely on Scarlet and Violet models.
Models can be deceiving in this sense, see Zelda's Ganondorf who was canonically stated to be 7'6", but whose model was always closer to 10 feet just for intimidation factor.
