Shinies were never super rare, even back before the halving in gen 6. 1 in 8000 basically guarantees you'd encounter one or two naturally playing through all the main series games at a normal pace.
Though, I do agree that they are entirely too common in the current gen. Due to a few factors actually. The halving of full odds in gen 6 that carried over to later gens, the ridiculous boost given by the shiny charm, and the biggest factor, overworld wild pokemon, which basically allows you to run dozens of rolls in seconds. If you keep your eyes open, you are basically guaranteed to come across several shinies in SV without even hunting them. And if you ARE hunting them, it is ridiculously easy to do so. Thanks to sandwiches, you can cut the shiny rate down even further, AND filter wild encounters by type. It completely trivializes the hunt. You can turn up 3 or more in a single hunt.
Personally, I think it takes some of the magic away. It goes from an exciting moment to "oh another one". But, I do appreciate quality of life improvements to a task that is traditionally very time-consuming. All my shinies prior to gen 9 were encountered naturally, simply because I never had any desire to attempt a hunt. Now, I actually hunt specific shinies because it's easier and less time consuming to find what you're looking for.
tl;dr: I prefer the mystique of old full-odds, but still appreciate how easy it is to target ones you want in current-gen
