They would all be animals with a touch that makes them look like mythological monsters, an optical illusion.
In the case of the centaur, it is a prehistoric deer with long neck whose Leaf-Horns can be manipulated like arms.
The minotaur will be based on a Scottish highland bull, with its fur covering its real eyes and a fire organ on its forehead simulating an eye, Sauron eye style.
The pegasus will actually be a seahorse (fish) that with its evolutions acquires equine features, but is still a fish; in its last stage it acquires characteristics of a flying fish, so it gives the illusion of being a pegasus.
