Defense is useless if you have no staying power and very limited utility.
Also no good abilities, you hate Knock Off and Poison and Burn means you're already dead.
Rhydon is not a good Eviolite mon.

It's better than Rhyperior, though, as everything you said also applies to Rhyperior
I also don't know what you mean by "no staying power," Rhydon has a pretty big physical defense stat, and right now it can use tera to get rid of its bad typing and get actual use out of Lightning Rod, so it's usable enough

That doesn't really count. Incineroar has a type advantage, and isn't exactly frail itself, so I can see it winning pretty handily.

No, though be fair it's such a 'generic' looking pokemon it's no surprise that it's used as nothing more than fodder. Same goes for stuff like Golem or Ursaring or whatever, there's not really anything that makes them stand out in any major way, they are 'tough' looking pokemon and that's all there is to them.
It's like how they'll ALWAYS have Oddish and Hoppip and Sentret in those 'walking through the wilderness and there's pokemon everywhere' scenes, they're so basic that they're perfect as background noise.

You have yet to name a way in which Rhyperior is better
No one talks about Rhydon in those videos because even though it is better, it's still irrelevant in VGC. where slow defensive Pokemon are hard to make work, so any youtuber that focuses on VGC is gonna pass it over. And a lot of those videos were made before tera became a thing

rhyperior is still better because it gains an ability that reduces damage taken from super effective attacks while also having higher attack. eviolite rhydon becomes a physical tank but that doesn’t really matter when everything runs fighting and ground moves and it easily gets one-shot by grass and water moves.
