Because only fat people like seeing fat people. To the healthy its gross, and hamfisting in characters based mostly on their characteristics (race, gender, fat etc) has proven to be a bad move.

This. If there was a weight mechanic for trainers in the games and the player character started out as fat, that character would have lost quite a bit of weight by the 8th Gym if the game was played regularly and the player wasn't sidetracked by the cooking minigames.
