Doing a Let's Go playthrough strictly with mons I've never used before, which in Gen 1 is a very short list. Trying to get Parasect over but he just blows. I think Spore is a given and I also am using Tangela so I don't need grass coverage. X-scissor? What TMs?

You can add 200 points to any stat, anything can be a mixed attacker in Let's Go.

Looks like he's one of only 2 pokemon in that game that learns Aromatherapy
I'd say just play it as a support cleric
Something like

Let's Go Parasect with maxed out AVs is equivalent to Espeon in a regular game with maxed out EVs. Are you going to tell me that the equivalent of base 130 Sp. Atk is "shit damage"?

Awakened Parasect will be faster than every single NPC-owned Poison-type in the game except Gengar and MAYBE Haunter if you have a bad nature. Just use Spore.

At that point you’re better off just using Dig or X Scissor to hit them than hitting them NVE with your weaker offensive stat.

Obviously not every enemy but your point is on it being worth the move slot but in this very common scenario you’re not going to be using it. Flying & Bug are also common types so you’re not getting that much mileage out of it. Having more coverage or utility like Leech Seed or Aromatherapy would be more useful.

I'm right in front of Bill's house and have already encountered in the wild: Bellsprout, both Nidorans, Bulbasaur, Beedrill, Zubat, Ekans, and Venonat. Plus Koffing and Grimer in Trainer battles. Poison-ass region. Bullet Hell for a Paras.

Don't your Pokémon already have built-in Lum Berry and Focus Band? By the time you kill something with Leech Seed you could have just hit them with Giga Drain or Leech Life. Support moves really aren't necessary in this game aside from the occasional sleep move if you want to set up a boost before one-shotting everything.

When I was planning my mono Poison team I didn’t realize how much variety I had. Almost wanted to do another run with the mons I didn’t use.

Yeah you could dig to stall leech seed damage
Alternatively you could just run toxic or something in the event that sleep isn't the play.
