It's a general headcanon thing based on the idea that every Pokemon that are guranteed to be obtained for each protagonist is their "canon" team. Think like how Red's team is based on Pokemon he gets as gifts or are guranteed to encounter in Yellow.

Correct, it was soft-retconned into Let's Go Pikachu/Eevee.
Funny that the team rocket trio from the anime are canon in the games since that game though.

btw you fight Red, pre-gen 7 battle in that game as well, and it's generally implied the game takes place during or shortly after the events of gen 2. So if you want to see the Red's modern canon team, play Let's Go. Or just play gen 7 post-game to see his team in modern times in-setting, afaik gen 7 has not been retconned, though there is some strange stuff with the SwSh DLC.

Probably because it just doesn't fit when the characters. If anybody would use one then it's probably Leaf. But even then think about that, Leaf with a Tentacruel just seems off.

Its very clearly supposed to take place prior to the Gen 2 events(if those events happened at all in LG timeline) given Team Rocket's state, the fact that there was no league champion prior to Trace, the gym leaders, including Gio, being Gen 1 and Sabrina's prediction.
