Maybe you haven't been, so your impression that they were "incredibly well received" (kek) is based on what, some YouTubers said it? Have the past few generations, especially the debacle around SwSh, not shown everyone by now that the people who make their living talking about Pokémon will literally worship basically anything that gets released with the name Gamefreak on it? Their praise is neither indicative of the actual quality nor is it reflective of what broader public opinion is.
In case you don't remember I will relay what the feeling was at the time. When Sun and Moon came out they were not "incredibly well received (kek), they were actually the opposite. They were the LEAST well received games in the entire series up to that point. The fact that 30% of the game is a tutorial, and another 10% is unskippable handholding and boring dialogue that takes centuries to get through, was criticised and ridiculed by everyone from /vp/ anons to those in the mainstream. Up to that point they were the most heavily criticised Pokémon games which had ever been released.
You need to also understand the atmosphere of the time to fully grasp the degree is antipathy and animosity towards Sun & Moon. The fanbase had been basically perfectly primed towards hatred for whatever came out next. Generation 6 with X & Y versions had just been deliberately cut short resulting in an undercooked generation that had been purposely gimped and handicapped so that Gamefreak could move on to the next one and make more money. We didn't need leaks to tell us that version Z was cancelled, it was plainly obvious to everyone with a working brain and working eyes that X & Y were rushed and that Pokémon Z was intended to be next, such as Diamond & Pearl.
