If you challenge that unknown gym and lose you will still have to go find the "right" one, and if you clutch a victory you just made another gym that you missed(but still HAVE to do to complete the game) trivial baby mode shit.
Other open world RPGs, if you manage to skip a boss, good for you, you don't have to go back and do it despite being stronger than a later boss. But the entire premise of gyms is you have to beat all of them to earn the right to challenge the elite 4. The entire premise of Starfall is you have to do all of them to take down team star. The entire premise of the titans is you have to do all of them to get all the HMs and save doggo. The entire premise of area zero is you have to do all that shit above to prove you're strong enough to get to the final boss and clear the game. You have to do ALL of it, so there is either scaling or an order unless you want the game to be like microwaved leftovers- scalding hot and frozen at the same time.
The scaling on this game is also screwed- any relatively experienced gamer is going to find that BLJ skip next to the first town, and five feet from there is a ~L25 fixed spawn scyther which then lets you catch whatever you want from there. Ground items infinitely and rapidly respawn so you can't run out of money, balls, healing etc. Wandering around exploring and catching stuff is really fun and now you're level 40 before even visiting the damn school lmao. You're gonna say some shit like "have self control" but you just got done writing an essay on why having limitations is gay baby aids
