I don't mind that. Ed Sheeran is really chill for how famous and successful he is. Also genuinely likes Pokémon.
I think the better question is why it's a generic love song and not something on-topic when the song was written specifically for Pokémon.

At first I didn't recognize it so I thought Gamefreak just used some singer's song for the ending, then I heard Ed Sheeran did it, then I heard Sheeran did it specifically for Pokemon SV and it wasn't a song that existed already, and then I listened to it again and paid attention to it. And I fucking liked it. It's good.

Also kind of surreal that "Toby Fox remixed an Ed Sheeran song for Pokemon" is both a real statement AND accurate.

How so? TPC had already collaborated with him on GO and he wasn't shy about his love for the series and games. He also writes songs continuously (songs for other people, songs to sing withother people people, he's even writing songs for an album he said won't be released until after he's died for fuck sake) and doubtless when he met GF staffers, he offered to write them one, as much because as a fan I know I'd love to have something I created included in a core game (and likely most fuckers here would be the same) and probably because he has kids now and they're likely getting into it, so he could share./surprise them with "Daddy's song is in the game!".
