it's having to split EVs
you either go full into 1 stat, in which case bring a pure ATK/SPA pokemon, or you go for both, which means you lose SPE or Bulk, or you split it down the middle to keep it mixed
the only real advantage to mixed attackers is supposed to be that the opponent doesn't know what you're bringing, but the element of surprise lasts for 1 turn + most of the meta right now is too minmaxed in terms of BST for mixed attackers to be good enough even with the element of surprise
Iron Valiant is an insane minmaxed pokemon too and it doesn't see all that much play, although it's the one that sees the most out of the mixed

the speed wouldn't be good enough even with Slush and due to the very low HP even with Ice Scales+Snow+Aurora Veil it wouldn't survive more than 2 attacks
I would honestly rather have a little evasion over Ice Scales, maybe I'm wrong but I think the HP is just way too low
