I've never played a Bethesda game on console, but at least on PC they'd crash before any memory leaking really affected performance. I had a classmate who literally could not play 360 New Vegas anymore because he left his save file running too long, so that tracks.
You're right that it's more semantics if it's just crashing or not, but maybe I'm lucky because the game never crashed on me despite the shit performance. What I most remember from leaving the game running were those "reference" poke balls suddenly appearing everywhere. Splatoon 3 was the game that consistently crashed for me for whatever reason.
