SV has the issues of being somewhat unpolished. You can see through the ground a bunch when you fly in at odd angles, things will pop up as they render in and the launch was even more buggy.
However, the game is much more "open" of a Pokemon game. Unlike the "open world" of Galar, you eventually will unlock the tools using your Cover legendary to be able to fly and climb around.
Tera also feels better then how the other gimmicks felt. Can't be spammed as often and isn't saved for special events like Gym battles.
No more rustling grass or fishing. You see the Pokemon, you catch it. No blind guessing or luck. Certain guarenteed tera spawns can be found if you wanna look around.
Trainer encounters are also now more "find them" rather then being obsticles. Gyms can be done in any order, but have set levels (You will most likely beat the second and third gym before going to the first gym). You also will probably not visit half the map until post game and will question why even check these areas out except to 100% the game.
I feel there is more to do with Scarlet and Violet compared to SwSh which feels like ass when trying to get certain Pokemon while visiting the most linear ass routes or needing to chamge my switch clock to get the weather for a certain Pokemon.
