Zangoose, Liepard, and Mismagius don't really need to be explained imo, they're easy choices.
Articuno has always been pretty sexy, but Ice types are risky to stick into, so the Galarian form existing is really a fortuitous occurrence.
Whimsicott has a lot going on - shortstack, lots of nice hair, good personality - but it's really the horn handles that push it over the line for me.
And I think Gourgeist is vastly underrated. Bottom heavy as fuck, comes in whatever size you want (the image there says average but I'd probably go bigger), and frankly really cute looking.
Other pretty solid contenders that didn't make the cut (a literal B team) - Bellossom, Oricorio (think about the form changing), Sneasel, Diance, Alcremie, and Lopunny of course
